Pago de Tharsys Millésime Barrica Brut Nature Reserva. A sparkling wine belonging to the D.O. Cava, produced by Bodegas Pago de Tharsys in Utiel-Requena. It has the official certificate of the E.U. of Organic Wine. It is made with Chardonnay grapes selected by hand harvesting in its organic vineyard. The base wine has been fermented in French oak barrels, plus 2 months of aging on its lees. After tirage, the wine was aged for more than 30 months on its lees. It has an old gold color with a bright golden rim. Extra fine, delicate and persistent bubbles. The nose presents an explosion of stone fruits and citrus (peach, apricot, yellow plum, yellow grapefruit and lemon peel), with subtle aromas of vanilla, English cream, cookies and fresh butter. The palate is dry, with a round, unctuous and voluptuous mouthfeel, delicate and enveloping bubbles from the long aging in rhyme. Long persistence, and surprisingly reminiscent of toasted nuts: hazelnuts, almonds and crust of village bread and cookies. Limited edition of 2000 bottles.
