Dominio de Pingus PSI. Dominio de Pingus PSI is a project of the Danish Peter Sisseck, a 100% Tinto Fino red wine made in the D.O. Ribera del Duero. Alcoholic fermentation is carried out in large cement tanks. Subsequently, malolactic fermentation and aging is carried out in the same tanks. Part of this wine was aged for 18 months playing with an assemblage of used French barrels where two other wines from the winery had previously aged: Pingus and Flor de Pingus.
